Ingredients:

  • 6g green tea BBQ seasonings
  • 1 whole chicken (about 3.5 lbs), skin on
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 1 sprig fresh sage
  • 1 large clove garlic, minced
  • 1 lemon, cut into quarters
  • 1 bunch fresh asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: 1/2 cup chicken broth

Instructions:

Prepare the Chicken:

  • Preheat the oven to 375°F (190°C). Rinse the chicken and pat it dry with paper towels. Remove any giblets from the cavity.
  • Drizzle the chicken with olive oil and rub it all over the surface, including the wings and legs. Season the outside of the chicken with salt, pepper, and the green tea BBQ seasonings.

Stuff the Chicken:

  • Stuff the cavity of the chicken with lemon quarters, minced garlic, and fresh herbs (thyme, rosemary, and sage). You can also tie the legs together with kitchen twine to keep the cavity closed.

Roast the Chicken:

  • Place the chicken breast-side up in a roasting pan or baking dish. Roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken with pan juices halfway through cooking.

  • While the chicken is roasting, toss the asparagus spears with olive oil, salt, and pepper. Spread them out on a baking sheet.

Roast the Asparagus:

  • Roast the asparagus in the oven for about 10-15 minutes, or until tender-crisp. You can also roast the asparagus during the last 15 minutes of the chicken’s cooking time.

Serve:

  • Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve the roasted chicken with the asparagus on the side. Drizzle any remaining pan juices over the chicken and asparagus.
