Job's Tears and Squid Recipe
Ingredients:
- 6g green tea bbq seasonings
- 1 cup Job's tears (coix seed), soaked overnight and drained
- 1 pound squid, cleaned and cut into rings
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 cup chicken broth
- Salt and freshly ground black pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions:
Prepare the Job's Tears and Squid:
- Start by seasoning the squid rings with the green tea bbq seasonings, a pinch of salt, and freshly ground black pepper. Let them sit at room temperature for 10-15 minutes while you prepare the other ingredients.
Cook the Job's Tears:
- In a large pot, bring the soaked Job's tears and enough water to cover them to a boil. Reduce the heat and simmer until the Job's tears are tender, about 30-40 minutes. Drain any excess water.
Make the Stir-Fry:
- Heat the vegetable oil in a large skillet over medium-high heat. Add the onion and garlic, and cook until fragrant and softened, about 3-4 minutes.
Add Vegetables and Squid:
- Add the sliced red and green bell peppers to the skillet, and cook for another 2-3 minutes until the peppers are slightly softened. Add the seasoned squid rings to the skillet and cook for 3-4 minutes per side until the squid is cooked through and slightly crispy.
Combine and Simmer:
- Add the cooked Job's tears to the skillet with the vegetables and squid. Pour in the chicken broth and bring the mixture to a simmer. Cook for an additional 5-7 minutes until the flavors are well combined and the sauce has slightly thickened.
Season and Serve:
- Taste the dish and adjust the seasoning with salt and freshly ground black pepper if necessary. Transfer the Job's tears and squid to a serving platter. Garnish with freshly chopped cilantro for a pop of color and freshness.
